I actually love baking, but I find it hard to find the time. In our household, it is mostly my husband who does the baking. He is rather good at it. I have some recipes that are real winners, but some of them take up a lot of time, and with two small children… I need it to be simple.
That’s why I love this recipe. It’s super easy and quick to prepare, and the yogurt makes it fresh and delicious. Enjoy!

Easy Apple Cake recipe, with Yogurt
Equipment
- Springform pan 23cm/9"
- Baking paper
Ingredients
Dry ingredients
- 175g flour
- 100g sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon
Wet ingredients
- 90ml sunflour oil
- 125ml full fat yogurt
- 3 eggs
- 1/2 tbsp lemon zest
Apple mixture
- 2 apples
- 2 tbsp lemon juice
- 2 tbsp sugar
- 1 tsp cinnamon
Extra
- butter for greasing the pan
Instructions
- Preheat the oven to 180 °C. Line the bottom of a springform (23cm/9") with baking paper and butter the sides
- Mix all the dry ingredients, then add the wet ingredients and stir until all is mixed well.
- Wash and peel the apples, remove the cores, and cut them into thin slices. Mix the lemon juice, sugar (2 tbsp), and cinnamon in a bowl, and add the apple slices. Mix until all the apple pieces are covered with the sugar-cinnamon mixture.
- Pour half of the batter into the springform. Arrange a layer of apple slices onto it and pour in the rest of the batter. Arrange the rest of the apple slices on top.
- .Bake the cake at 180 degrees for 30 to 40 minutes until golden brown. Let the cake cool down a bit before removing the sides of the springform.
Notes
If you don’t have fresh lemons, you can replace the lemon zest with some lemon juice.
I’m not too fond of super sweet cakes. If you like it sweet, you could try adding 135 grams of sugar instead of 100 grams.
